They’re massive spoilers though, so be warned.
During the torture scenes, the numbers you hear Yamori/Kaneki choking out is a countdown from 1000 in 7-second intervals. This was to make sure that they wouldn’t lose their minds amidst all the mental stress caused by the repeated mutilation of their own flesh :^)
More specifically, Yamori was severing Kaneki’s fingers and toes and allowing them to grow back, only to repeat the process later on. That’s also the reason why both Kaneki’s fingernails and toenails turn black, and why his hair becomes white. Oh, and that centipede was inserted into his ear and wiggles around in his head and stuff in the manga.
