It doesn’t look like the anime will be explaining these any time soon, so I’ll do it for you guys since I’m really super cool and everything.
First off, CCG stands for ‘Commission of Counter-Ghoul’. Pretty self-explanatory.
Kakuhou (赫包) — this hasn’t been mentioned yet but it’s relevant enough to warrant an explanation, I guess. So, this is basically a sack-like organ that only ghouls have, its main function being to store RC cells for whenever the kagune is released. RC cells are present in both humans and ghouls alike and surprise, surprise, take a guess at why ghouls gobble up humans for breakfast, lunch, and dinner. Though they flow like blood, RC cells also have the ability to become as hard as teeth — I suppose you could refer to them as “liquid muscles”.
Kagune (赫子), as mentioned in the previous episode, is a ghoul’s predatory organ that functions as both their weapon and claws. They’re entirely composed of RC cells and in Kaneki’s case, these would be those bendy tentacle looking things that sprout out of his back. The location of the kagune varies from ghoul to ghoul, hence Nishio’s puke-inducing neon coloured one that comes out of his ass or something.
When released, almost all of the ghoul’s physical capabilities are heightened as well as being extra resilient and mobile. Grossly enough, ghouls can harden or soften their kagune at will.
A Quinque (クインケ) is a type of weapon that’s created from a ghoul’s kagune. Like the kagune, quinques can take many forms like axes, guns, shields, or blades. The quinque can also act as a remote control of sorts, as it’s capable of emitting electrical signals that stimulate the kakuhou to release and control the kagune.
